Pesto:

Gather lots of basil (or really, any herbs you’d like!), garlic, olive oil, Parmesan, and your nut choice. I usually grab about 8 cups of basil (no stems), blitz it in the food processor, add a hand full of nuts (roasted lightly), blitz it…1/4 cup of parmesan….blitz it..

Add one tablespoon on garlic to bowl….re-blitz everything to get a good consistency and add about 1/4 olive oil or to taste. Smear on bread, pasta, or anything else that looks good.
