Gelato

This is a basic recipe, to which any fruit in season can be added.

5 egg yolks
225g sugar
500ml milk
125ml single cream
1 tsp vanilla extract

bunch of fruit in season, chopped

Whisk the egg yolks and sugar in a large bowl until the mixture is thick and pale yellow. Heat the milk to a simmer then whisk it into the egg mixture. Pour back into the pan (rinse it out first) and cook over a low heat, stirring constantly until the mixture is thick enough to coat the back of a spoon. Don’t boil or it will scramble. Stir in the cream and vanilla extract and cool. Add fruit and use a hand blenders to blitz.

Strain into an ice-cream maker (or freezer box) and churn until frozen (or freeze). Enjoy!
